OUR PROCESS
HARVESTING

Our agave pineapples are trimmed very close to the heart, leaving a white appearance with little green leafy exposure, once the agave has reached full maturity.

COOKING
​
The agave is cooked fresh, slowly, in a stainless steel autoclave, to retain its crisp, rich, natural flavors.

FERMENTATION
​
We utilize a medium/slow fermentation system. Inside these wood vats the tequila gets its flavor and aromas while sugar is being converted into alcohol. that provide the flavors and aromas.
DISTILLATION
​
Is the process where the alcohol is separated from the fermented wort. We distill the Tequila two times: the first separates and concentrates the alcohol while the second distillation enriches it's content.
